Lemons provide two distinct flavor components: juice (approximately pH 2.0–2.5, primarily citric acid with malic acid — a powerful acidifier and brightness enhancer) and zest (the oil-rich outer rind, dominated by limonene, the terpene responsible for the characteristic lemon aroma). These function differently in cooking: lemon juice adds acid and brightness; lemon zest adds aromatic complexity and fragrance without significant acid. A preparation can need one, the other, or both. Zest should be removed only from the yellow outer layer — the white pith beneath is intensely bitter.
