Flavor profile

Chervil's flavor comes from estragole (the same compound in tarragon and basil) in very low concentration, combined with anise-like anethole and the clean herbal background of its parsley-family cousins — creating a murmur of anise rather than tarragon's shout. Being extremely volatile, it must be added at the very last moment to cooked preparations — added early, it is entirely invisible; dried, it has essentially no flavor. In fines herbes (the classic French blend of chervil, tarragon, chives, and parsley), chervil provides the connective tissue that ties the other three together without asserting itself individually.
