Chervil's flavor comes from estragole (the same compound in tarragon and basil) in very low concentration, combined with anise-like anethole and the clean herbal background of its parsley-family cousins — creating a murmur of anise rather than tarragon's shout. Being extremely volatile, it must be added at the very last moment to cooked preparations — added early, it is entirely invisible; dried, it has essentially no flavor.
