Mascarpone is produced by heating cream to 185°F and adding acid (citric or tartaric), then straining the resulting curds through several layers of cheesecloth to achieve the characteristic thick, spreadable texture. Unlike ricotta (made from whey) or cream cheese (made from whole milk with bacterial cultures), mascarpone is made from cream and acidified mechanically — the result is pure, fresh dairy richness with very little of the tangy lactic notes of cream cheese or sour cream. This neutrality is the key culinary advantage: mascarpone enriches without adding sourness. In tiramisù, mascarpone combined with egg yolks and sugar creates the luscious cream layer; the delicacy of the mascarpone allows the espresso and cocoa flavors to dominate.
