Yogurt fermentation proceeds through two bacteria in symbiosis: Streptococcus thermophilus begins fermentation, creating lactic acid and formate that stimulates Lactobacillus bulgaricus; L. bulgaricus produces more lactic acid and acetaldehyde (the characteristic yogurt aroma), while also producing amino acids that stimulate S. thermophilus. The result is a uniquely tangy, creamy, aromatic product. Full-fat yogurt (from whole milk) has significantly better flavor and body than low-fat; Greek-style yogurt (strained to remove whey, concentrating protein and fat) is thicker, richer, and less sour. Labneh (yogurt strained overnight) is the Middle Eastern version — spreadable, like a fresh cheese. In South Asian cooking, yogurt is used as a marinade base (tandoori chicken: yogurt + spices + acid tenderize and flavor the protein; the proteins in yogurt also create a protective layer during high-heat cooking), in raita (cucumber-yogurt condiment), and in curry sauces.
