Flavor profile

Quince is among the most aromatic fruits before cooking — a single ripe quince in a room fills the air with a complex floral-tropical-apple fragrance from dozens of volatile compounds. The raw fruit, however, is hard and full of tannins making it completely inedible without cooking. Heat transformation is dramatic: cooked quince turns from cream-white to deep apricot-rose due to the Maillard reaction of the tannins and sugars (not from anthocyanin pigments). The high pectin content (among the highest of any fruit) causes quince to set readily — membrillo (quince paste, a Spanish specialty) is essentially quince jam cooked until stiff, cut into slices, and served with Manchego cheese. Poached quince (in red wine with spices) and quince jam are classic preparations. In Middle Eastern cooking, quince appears in lamb stews and pilaf (the tart-sweet fruit is a classic partner to lamb). The fruit must be peeled and cored (the core is particularly hard and astringent); cook in acidulated water to prevent oxidation browning before the cooking transformation occurs.
