Quince is among the most aromatic fruits before cooking — a single ripe quince in a room fills the air with a complex floral-tropical-apple fragrance from dozens of volatile compounds. The raw fruit, however, is hard and full of tannins making it completely inedible without cooking. Heat transformation is dramatic: cooked quince turns from cream-white to deep apricot-rose due to the Maillard reaction of the tannins and sugars (not from anthocyanin pigments).
