Kumquats (Fortunella species, now reclassified under Citrus) are the smallest commercially available citrus, approximately the size of a large grape. The Nagami variety (oval, tart, common) and the Meiwa variety (round, sweeter, less acidic) are the most widely available. The thin, sweet, intensely aromatic rind is the primary eating component; the flesh is quite tart (similar to lemon but with kumquat's distinctive floral top note).
