Mushrooms are unique among common vegetables in containing significant guanosine 5'-monophosphate (GMP) — one of the ribonucleotides that synergize with glutamate to dramatically amplify umami perception. A combination of mushrooms with parmesan, kombu, or meat creates an umami synergy: the nucleotides (GMP from mushrooms, IMP from meat) combined with glutamate from the other ingredients can increase perceived umami up to 8x above either alone. Heat management is critical: mushrooms are 90% water, and adding too many at once to a pan traps steam and causes steaming rather than browning. For proper sautéed mushrooms — golden-brown exterior, concentrated flavor — use a wide, hot pan, add mushrooms in a single layer, and do not stir for the first 2–3 minutes.
