Cucumber's fresh aroma comes from C6 aldehydes — primarily (2E,6Z)-nonadienal and trans-2-nonenal — produced by enzymatic activity in the cells when they are damaged (by cutting or bruising). The same aldehydes appear in watermelon and other cucurbits, which explains the obvious family resemblance in aroma.
