Pomelo is the parent species of grapefruit (a hybrid of pomelo and sweet orange, likely originating in the Caribbean in the 17th century). The flavor is gentler than grapefruit — similar tart-sweet citrus character but with significantly less bitterness from naringin (the grapefruit's primary bitter compound). The extremely thick pith (up to 2 inches in some specimens) is largely tasteless and discarded; the segments are pulled apart and the membranes peeled away for the dry, firm juice sacs inside. The fruit's texture is drier and more cotton-candy-like than grapefruit — the individual juice sacs separate more easily. In Thai and Vietnamese cooking, pomelo is used in salads (yam som-o — pomelo salad with coconut, dried shrimp, peanuts, and lime dressing) where the dry segments absorb the dressing without becoming soggy. In Chinese households, pomelo is given as a New Year gift symbolizing prosperity. The zest (from the flavedo, the thin yellow outer layer under the thick rind) is intensely fragrant and can be used like grapefruit or orange zest.
