Morels are mycorrhizal fungi with a complex, deeply savory flavor that is genuinely different from other mushrooms — earthier, with a slightly smoky, nutty depth from specific volatile compounds that develop fully only when cooked. The hollow, honeycomb interior of the cap is a distinguishing feature (and also means morels must be thoroughly cleaned, as the pockets trap sand). Morels must be cooked — they contain low levels of hydrazine compounds that are destroyed by heat but toxic raw. Fresh morels (spring, 2–3 week season) are excellent halved and sautéed in butter; the hollow caps can also be stuffed. Dried morels are available year-round and are dramatically more concentrated in flavor — the soaking liquid from reconstituting dried morels is intensely flavored and should be strained and used as stock.
