Cremini (also spelled crimini) mushrooms are simply white button mushrooms harvested slightly later — the gills are opening, the cap is darker brown, and the flavor is deeper. White, cremini, and portobello are the same species (Agaricus bisporus) at different maturities; the flavor difference is real but modest. Creminis have better texture than buttons for sautéing (firmer, less water loss) and more savory depth. They absorb flavors from cooking medium and accompanying aromatics readily — garlic, thyme, white wine, sherry, and soy sauce all develop well with creminis. In preparations where mushrooms are a supporting flavor (pasta sauces, braises, stuffings, risotto), cremini provides reliable depth without overwhelming other ingredients.
