Gruyère is an AOP-protected Swiss cheese made from unpasteurized cow's milk in the canton of Fribourg, ripened for a minimum of 5 months in damp cellars where regular brushing and turning develop its firm rind and complex interior. The flavor is built on sweet lactic notes (from the milk's quality), roasted nut character (from protein breakdown during aging), and a long, slightly salty finish — less pungent than aged Comté or Emmental but more complex than either.
