Flavor profile

Swiss chard (silverbeet) and rainbow chard are the same species (Beta vulgaris) as beets, and share the faint earthy, mineral character of beet greens — mild enough to use in abundance, versatile enough to work in any application that suits leafy greens. The stems and leaves have dramatically different cooking times — stems require 5–8 minutes to become tender; leaves wilt in under 2 minutes — so they are typically added to the pan in stages. The stems can be used separately as a vegetable, braised in olive oil with garlic and lemon, or pickled for their crunchy, colorful character. Chard is one of the most important vegetables in Swiss, Italian, and Middle Eastern cooking: in Turkish cuisine (kuzukulağı çorbası), in Provençal tian, and in Ligurian stuffed pastas. Its slight earthiness and mild sweetness make it a natural companion for raisins, pine nuts, and chickpeas in the agrodolce tradition.
