White asparagus is the same species as green asparagus (Asparagus officinalis) but blanched by hilling (piling soil over the emerging shoots to exclude light — labor-intensive and explaining the significant price premium). Without chlorophyll synthesis, the shoots remain white and develop a milder, creamier flavor than green — still sweet and asparagus-flavored, but without the grassy, vegetal intensity of green.
