The malty, fermented grain character of the ale base carries through to the vinegar — creating a distinctly earthy, slightly bitter, complex flavor unlike any wine-based vinegar. Brown malt vinegar is the traditional condiment for fish and chips in Britain — the malt flavor pairs specifically with the battered fish's yeasty crust character (both being barley fermentation products).
