Flavor profile

Genuine malt vinegar is produced through a complete brewing process: malted barley is mashed, fermented by yeast to produce "distiller's beer" (unhopped ale), then subjected to acetobacter fermentation to convert the alcohol to acetic acid. The malty, fermented grain character of the ale base carries through to the vinegar — creating a distinctly earthy, slightly bitter, complex flavor unlike any wine-based vinegar. Brown malt vinegar is the traditional condiment for fish and chips in Britain — the malt flavor pairs specifically with the battered fish's yeasty crust character (both being barley fermentation products). "Non-brewed condiment" (NBC) — a synthetic product of diluted acetic acid colored with caramel — is legally sold as a vinegar substitute in the UK and is inferior in flavor. Malt vinegar is also used in British pickles (Branston pickle, pickled onions, pickled beets), in HP sauce, and as a seasoning for chips with the distinctive shaken-from-a-bottle application.
