Ice wine vinegar begins with ice wine (Eiswein in German) — produced from grapes that have naturally frozen on the vine, concentrating the sugars and acids as the water content freezes out. The resulting wine is extraordinarily sweet (residual sugar 125–250g/L), intensely fruity (peach, apricot, honey, riesling florals), and high in acid. When converted to vinegar, this extraordinary sweetness and complexity carries through: ice wine vinegar is less sharp than standard wine vinegar, with a thick, rich, honey-fruit character. Canadian ice wine vinegar (particularly from Niagara and British Columbia) is the most widely available. Used as a finishing condiment: a few drops over foie gras, on smoked duck, on aged cheese, over seared scallops, or mixed into glazes for salmon. The extraordinary sweetness means it should be used in very small quantities. Can also anchor a world-class vinaigrette for composed salads with fruit and nuts.
