Flavor profile

Riesling's wide sugar range (from 0g/L residual sugar in dry Alsatian or Austrian to 300g+/L in late-harvest German Trockenbeerenauslese) makes it one of the most style-flexible white wines. The high natural acidity (tartaric and malic acid, preserved due to Riesling's cold-climate origins in Germany, Alsace, and Austria) means even the sweetest Rieslings feel balanced and vibrant. The petrol/gasoline note (from TDN, 1,1,6-trimethyl-1,2-dihydronaphthalene) develops with age and is a hallmark of great mature Riesling — controversial but deeply complex when well-integrated. In cooking, Riesling is used in classic Alsatian preparations: choucroute garnie (sauerkraut and charcuterie braised in Riesling), coq au Riesling (chicken braised in wine with cream and mushrooms), and in fish preparations where the wine's acid brightens the sauce. German-style Riesling (off-dry to medium-sweet) is the classic pairing for spicy Asian cuisine — the slight sweetness tempers chile heat while the acidity cuts through fat.
