The difference between light and dark sesame oil is categorical: light sesame oil (from raw sesame seeds) has a mild, slightly nutty flavor and a high smoke point (410°F/210°C), suitable for stir-frying. Dark/toasted sesame oil (from roasted sesame seeds) has an intensely concentrated, nutty, aromatic, slightly bitter character from pyrazines and other Maillard products — it cannot be heated without immediate flavor degradation and is used exclusively as a seasoning and finishing oil. In Chinese, Japanese, and Korean cooking, toasted sesame oil is one of the most frequently used finishing flavors: in cold noodle dishes (sesame noodles), in the final seasoning of stir-fries (a drizzle at the end), in dipping sauces, in bibimbap, and in salad dressings. Even a small amount (1 teaspoon in a dressing for 4 servings) defines the character of a preparation. Sesame oil is naturally high in antioxidants (sesamin, sesamolin) that give it exceptional shelf stability — it does not rancidify quickly and keeps well at room temperature.
