Black cod (sablefish) is not a true cod at all — it belongs to a different family entirely and is one of the highest-fat fish in the sea, with around 15–20% fat content compared to 1–2% in true Atlantic cod. The fat is rich in omega-3 fatty acids and is distributed throughout the flesh in fine intramuscular deposits, creating a buttery, silky texture and extreme richness when cooked. Nobu Matsuhisa's miso-marinated black cod — marinated for 2–3 days in a sweet miso, sake, and mirin mixture, then grilled until caramelized — is the defining preparation: the miso's glutamate amplifies the fish's natural umami, the high fat moderates the salt, and the caramelized crust provides Maillard complexity that the delicate flesh alone cannot.
