Flavor profile

Stilton is made from pasteurized full-fat cow's milk with added starter culture, Penicillium roqueforti, and animal rennet, then pierced after 6 weeks to allow air in and the blue veins to develop. Compared to Roquefort, it is firmer, earthier, and less aggressively pungent — the cow's milk base gives it a more restrained richness and the shorter aging (10–12 weeks typical) produces a balanced rather than overwhelming intensity. The traditional British ritual of serving Stilton scooped from the wheel with port — the port filling the cavity as the cheese is extracted — is a flavor pairing of remarkable logic: port's sweetness, dried-fruit depth, and slight tannin perfectly balance Stilton's saltiness and earthiness. Stilton also pairs beautifully with celery sticks, walnuts, and pears in the classic British cheese board tradition. White Stilton (no blue veins, mild and creamy) is sometimes infused with apricot, cranberry, or ginger for the holiday table.
