Cheddar's distinctive character develops through two mechanisms: the cheddaring process (which expels whey and produces a particularly tight, firm texture) and aging, which converts fat into free fatty acids (producing the sharp, slightly acidic bite) and protein into crystalline tyrosine (producing the crunchy texture of aged Cheddar). Mild Cheddar (3–4 months) has a smooth, milky, straightforward flavor; sharp Cheddar (9–18 months) develops complex, pungent bite; extra-aged or "cloth-bound" farmhouse Cheddars (24–36 months) can be extraordinarily complex with notes of grass, nuts, and caramel.
