Authentic Camembert de Normandie (AOC) is made from raw Normande cow's milk and sold in the iconic thin wooden box that absorbs excess moisture during transport. Its Penicillium candidum and Geotrichum candidum surface molds work from the outside in — at peak ripeness (indicated by a fully yielding interior under pressure), the interior is almost liquid and aromatically intense. The 'Camembert de Normandie' distinction matters enormously: pasteurized Camembert (the most common form globally) is milder, more uniform, and considerably less complex. The classic Norman serving — at room temperature with crusty baguette, apple slices, and hard cider — reflects the terroir perfectly: all three accompaniments come from the same agricultural landscape. Baked whole Camembert (in its box) with rosemary and garlic is one of the most satisfying shared preparations, the melted interior functioning as a cheese fondue.
