Pinto beans are named for their speckled appearance (pinto means "painted" in Spanish), though the markings fade completely during cooking, leaving a uniform light brown exterior and creamy, starchy interior. Their earthy, slightly mineral flavor is substantial enough to stand up to the bold spicing of Mexican and Tex-Mex cooking — cumin, chile, garlic, and epazote — but milder than kidney beans and more versatile in soups and sides.
